When we heard there was a local venue in our homeland of Canterbury that did mushroom croquettes, we admit we were already smitten. Not just the - delightful but - normal fayre of mushrooms on toast, on pasta, on pizza.... or on steak, but something rarely experienced, crispy, creamy croquettes served with garlic aioli and shaved parmesan - delicious!
Since then we have found out The Laboratory is so much more, featuring a range of freshly produced food items, a selection of locally handcrafted ales and good coffee all bundled in the relaxed country environment you would expect of a kiwi town. Of course, they do pizza too Smoked Bacon, Tallegio, Spinach, Mushroom & Truffle Oil none the less and this is a part of their wood-fired pizza range which can be enjoyed inside, outside, or perhaps on the grassed areas with a blanket.

Whether you are looking for a drive in the country or a stop on your way down south, this little town in Selwyn is worth a visit. Prepare for change of pace, some fresh air and some crispy mushroomy delights maybe with a little brew on the side.
