Meadows'
Swiss Browns are often called Brown Buttons. In fact, they do
come from the same family as the popular White Button (Agaricus
bisporus) but they are simply another strain. However, the two
mushrooms are quite different. While they both share the same
size range and that familiar button shape, the Swiss Brown is a light
brown colour and more significantly, it certainly has a much stronger
flavour. It is a flavour that mushroom connoisseurs have
described as 'nutty'. Since their release on the New Zealand market, both the appearance and
delightful flavour of Meadows' Swiss Browns has led to them becoming a
real favourite with both professional and amateur chefs. More
and more people are beginning to appreciate the wonderful flavours and
the sheer versatility of the brown varieties. They can be used
in virtually any way, and in any dish, from simple salads to soups, as
accompaniments or as meatless dishes and wonderfully rich and complex
sauces. The only limits to how you use them is your culinary
creativity and your imagination.
