Cumberland Sauce

1/2 cup red currant jelly, melted
2 tbsp port wine
grated rind of one orange and one lemon
1 tsp prepared mustard

Mix all ingredients together to a smooth consistency

This is a classic sauce traditionally eaten with game and cold ham.  It is described as full flavoured - Shirley Bradstock
