Blue Cheese Cream

100g blue cheese (kikorangi or gorgonzola)
1 egg yolk
2 tbsp cream
a pinch of cayenne pepper
1 tbsp chopped herbs

Have the cheese at room temperature.  Mix all the ingredients together to a smooth consistency.

Can be served as a dip or spread.  The slight bite that you get from the blue cheese is a perfect compliment to the soft and delicate mushroom flavour.  The creaminess contrasts well with the crunch of the crisp bread coating on both the Golden and Garlic Crumbed Mushrooms.  Best served with Golden Crumbed Mushrooms as garlic is too much with the cheese - Shirley Bradstock
