½ tsp ground fennel
½ tsp ground cumin
½ tsp garlic powder
½ tsp ground coriander
1 bay leaf
½ medium onion finely chopped
1 stalk celery finely chopped
¼ cup water
¼ cup vinegar
500g mushrooms
1 lemon juiced
¼ cup light oil
- Put all the ingredients except the mushrooms, lemon juice and oil into a pan and bring to the boil, simmer for five minutes.
- Add the washed mushrooms re-boil then chill.
- Add the oil and the lemon juice.
- Chill and allow marinating for at least two hours.
