Toasted mushroom & Tomato sandwiches

SERVES: 2

  • 1 1/2 tbs butter
  • 300g White or Swiss brown button mushrooms, sliced
  • Salt & ground black pepper
  • 100g baby spinach leaves (optional)
  • 1/2 cup sundried tomatoes, chopped
  • 3/4 cup grated cheddar cheese
  • 4 Turkish or Pannini bread rolls, halved

Method

  1. Melt butter in a medium-high heat.
  2. Add mushrooms and cook, stirring occasionally, for 3 minutes or until soft.
  3. Drain on paper towel.
  4. Season with salt and pepper.
  5. Preheat a grill or sandwich toaster on medium-high.
  6. Arrange spinach leave, mushrooms, sundried tomatoes and cheese evenly on the bread roll bases.
  7. Season with salt and pepper.
  8. Top with remaining bread and press down firmly.
  9. Place sandwiches under the grill or sandwich toaster and cook for 4-5 minutes on each side or until toasted.
  10. Cut in half and serve.
