Baked Mushroom Parmesan

Ingredients.

  • 4 large Portabello mushrooms
  • 2 Tbl olive oil
  • 1 cup tomato pasta sauce, divided
  • 4 fresh basil leaves, thinly sliced
  • 1/4 tspcrushed red pepper flakes
  • 1 cup (115g) shredded mozzarella cheese
  • 1/4 cup (30g) grated parmesan cheese

Method.

  1. Heat the oven to grill. Brush both sides of mushrooms with oil. Place mushrooms, gill side down, in a 23cm baking dish.
  2. Grill for 4 minutes, remove & turn gill side up, grill 4 minutes.
  3. Remove mushrooms from baking dish, drain excess liquid.
  4. Preheat oven to 200C. Spread 1/2 cup pasta sauce on bottom of baking dish, then place mushrooms, gill side up. Sprinkle with basil, red pepper flakes & the remainder of the pasta sauce.
  5. Top with mozzarella cheese & parmesan; bake 5-10 minutes, until the cheese begins to brown. Remove & serve.
