Julia and Libby's - Mushroom "Tacos" with fresh Salsa

  • Salsa
  • 3 ripe tomatoes, finely diced
  • 1/2 red onion, finely diced
  • 2 cloves of garlic, finely diced
  • 1/2 cup fresh flat leaf parsley, finely chopped
  • 1 red chilli, finely diced and seeds removed.
  • 1/2 red capsicum, finely diced
  • Juice of 1 lime
  • 2 tablespoon extra virgin olive oil
  • salt and pepper to season
  • Filling
  • 2 cups walnuts
  • 2 tablespoon Tamari
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon chilli powder
  • 1 teaspoon smoked Paprika
  • 2 cups Meadow's brown button mushrooms, sliced
  • 1 tablespoon coconut oil

Method

  1. Firstly make the salsa - place all ingredients into a bowl and combine. Set aside.
  2. Place the walnuts, tamari, cumin & chilli powders and paprika into a food processor and pulse until mixture is crumbly and resembles mince.
  3. Heat a pan over medium heat, add walnut mixture in a pan with mushrooms and coconut oil. Cook for 5 to 7 minutes. Remove from heat and place into a bowl.
  4. Break apart cos lettuce pieces and wash under water. Dry off with a paper towel and place into a bowl.
  5. Build tacos by using the lettuce leaves as a taco, fill with the mushroom and walnut mixture at the bottom, then top with the salsa.
